Week 1 4lbs!

Today Jason and I got weighed in after our first whole week of eating and following the weight watchers plan. Jason lost 5lbs! I lost 4lbs! We worked out about 6 days last week and are planning on kicking it up to 7 this week. We feel great! I even bought a bikini that was 50% off that is more motivation for me. I plan on being healthy enough to wear it on our honeymoon when we go on our cruise to Mexico & the Bahamas! I can't wait! My goal next week is another 4lbs!

I am very excited this week, because my brother Seth and his family are coming to visit and getting here Saturday! My sister in law Jessica is a bridesmaid and my niece is our flower girl. We are taking them to Davids Bridal this week to try on their dresses and pick out a flower girl dress. I also can't wait because I get to try on my dress again so they can see it! Hopefully it will be a little looser than it was when I bought it. 

I am also very excited because this Sunday is our wedding shower for us that my best friend/bridesmaid Amanda is hosting for us. It is mostly family, my sister (maid of honor) will be throwing me another one for all my friends and family friends in November. I can't wait to see everyone. The big challenge will be not eating all the great shower food. My plan is to find some more weight watcher friendly recipes and be prepared for our shower. I hope everyone has a great week!

Veggie Quesadillas









CHICKEN VEGGIE QUESADILLAS

Hands-on time: 35 minutes

Time to table: 35 minutes

Serves 12 from 6 cups filling


    * 2 tablespoons vegetable oil

    * 1 large onion, chopped (about 2 cups)

    * 2 cups chopped celery (from 4 stalks)

    * 2 cloves garlic, minced

    * 1 cup grated carrots (about 1 large)

    * 4 cups cooked chicken, chopped or shredded

    * 1 cup packed fresh spinach, chopped roughly

    * 4 ounces spicy cheese (such as pepper jack)

    * 6 burrito-size flour tortillas

    * 3 teaspoons (or less) vegetable oil


Heat a large, deep skillet and add oil. When oil is hot, add onion and celery. Sauté until soft and beginning to brown. Add garlic and carrot and sauté another 1 – 2 minutes.


While vegetables are cooking, prepare chicken and place in a large bowl. Add spinach. Stir in hot vegetables. Add cheese and combine well. (May be prepared ahead to here, then refrigerated.)


Arrange 1 cup filling on half of each tortilla, spreading to the edge. Fold tortilla over filling and flatten firmly with your fingers.


Lightly wipe skillet clean with a paper towel. Heat on medium using 1 teaspoon oil, spread evenly, for every two quesadillas. Two at a time, heat quesadillas through until tortillas are lightly browned but still soft. Halve and serve immediately.

This is a delicious Weight Watchers recipe that I found online. It is pretty easy to make, the only thing that takes time is chopping the veggies. All of that can be done in advance and then you can make the actual quesadillas later. Plus for all you Weight Watchers friends these are only 5pts per serving:) The only thing I did substitute was the tortillas, I used whole wheat tortillas instead of regular flour ones.

Walking Me Down The Aisle



I am so happy that we got everything to work out. For our wedding I have always wanted Brett to be a part of it, but I didn't want to tell Jason to make him a groomsmen because he is my twin brother. It should be Jason's choice who stands up beside him not mine. Finally, we figured it out and I am so happy that Brett my twin brother will be a part of the most important day of my life! Brett and my dad will be walking me down the aisle together and I am so happy about that. The two best and closest men in my life to give me away to the new most important man in my life. Then after my dad kisses me and sits down, Brett will stand a few steps below my sister and will stand up on my side of the stage. After they pronounce Jason & I man and wife we will leave, then Brett, and then the maid of honor and best man. I am just happy. Brett agreed to it and I can't wait for that moment when I'm being walked down the aisle with them to see Jason standing in front of us. Only 5 1/2 months! 

Last night Jason and I attended our first weight watchers meeting. It was really nice to hear how others are doing on their weight loss and their tips for staying motivated. We signed up for a 10 week course so we should have enough time to learn the program and be able to continue it after the 10 weeks. So far the point system is great, I love that nothing is off limits and that this program teaches us to measure everything according to portions. We have so many points a day to eat whatever we want as long as we don't go over that set limit of points. Our exercise routine has been walking an hour everyday and lifting a half hour every other day. I'm just so excited to see next Tuesday how much weight Jason and I've lost. It has been great for us in motivating each other to count everything and write it down. I could see us using this eating plan forever, it is really easy and kind of fun to do. Weight Watchers

Today Jason & I signed up for a 10 week program with Weight Watchers. His aunt has had a lot of success and I know several friends who have also done it. We are excited to start and have begun counting our points today. By 10 weeks we hope to be down about 20lbs. We'll have to see! I am just so excited that we are doing this together and have a set schedule of foods and things to follow! I will keep everyone posted on the progress. We're off to the YMCA for our exercise. I'm going to be an AUNTIE!!!

My best friend since elementary school is PREGO and she just told me!!! She just found out and has to schedule a dr.'s appointment but, I am PSYCHED for her and her husband! That is so exciting!!! Much love to them and my future niece/nephew:)!!!

Natural Family Planning

Tonight Jason and I are going to our Natural Family Planning Class that is mandatory in order to get married in the Catholic Church. We are driving to South Bend to go because we couldn't get into one in Ft. Wayne until the end of August. I'm interested to see what they say and find out more information about this method. I will admit that I probably won't use it, since we don't want any babies on our honeymoon or anytime for the next 5-6 years. Above are pictures of the Boutonnieres & Corsages I have done. I have all the boutonnieres done and have finished the mother's corsages. Once I finish the corsages, my last task is to start the bouquets. Today, I hope to make my garters, & layout the ring bearer pillow. Busy busy busy..
