Cottage Cheese Pancakes..... DELICIOUS!


I have been searching the Internet lately for new Weight Watchers recipes and last night I found this one for Cottage Cheese Pancakes. These are the most delicious pancakes I've ever had/made. They only have 3 points per pancake and the serving size is a good size. I made them for my mom today and she loved them too. Check them out! YUM!!

COTTAGE CHEESE PANCAKES

Hands-on time: 10 minutes to mix
Time to table: 15 minutes for first pancakes, after that depends on size of the skillet 
Makes 10 medium pancakes
  • 4 eggs
  • 1/3 cup skim milk
  • 16 ounces cottage cheese (non-fat or low-fat work great)
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon, nutmeg, cardamom or other spice (optional but delicious)

  • 1 teaspoon (or more) butter or bacon grease

Place eggs, milk and cottage cheese in a blender and whir until frothy. Add the remaining ingredients and whir again until just mixed. (The batter can be made ahead to this point. Leave it at room temperature for up to a couple of hours, otherwise refrigerate, including overnight.)

Heat a large skillet on medium, add fat and let heat. (See ALANNA’s TIPS.) Fill a 1/3 cup measure with batter, pour into skillet. Let pancake cook, untouched, until small bubbles form in middle about 2 minutes. With a flat spatula, turn the pancake over and brown lightly, about 1 minute. Serve immediately with butter and syrup or fresh fruit, applesauce, sour cream or even deliciously plain.

Last night when I was recording my weight loss in my excel sheet and kind of bummed about losing less weight this past week I found this youtube video. It is a video blog of 2 college friends who are girls, that got on weight watchers together and have lost over 40lbs a piece. Their youtube name is "GoodbyeFatSuits" and it was very entertaining. I could relate to their feelings in each of their videos as they progress through their Weight Watchers journey. Their video inspired me so much and I feel more MOTIVATED than ever!! Week 3 Weight Loss: 1.8lbs!

We got weighed in after following weight watchers for  3 solid weeks and we lost more weight! Jason lost like 3.5lbs and I only lost 1.8lbs. I don't mean to sound bummed about it, but I was really good this week at resisting temptations with family being home and I just thought I'd lose more. I am proud of myself for how dedicated to the gym, eating healthy, and losing weight the right way.  This week's loss brings my total to 9lbs! I'm hoping by next Tuesday I will reach my 10lbs weight loss goal. I'm sticking with it, and have accepted that the loss of 3-4lbs a week may be over. That is ok, I just want to continue on being healthy and gradually losing. I could tell a huge difference in the way my wedding dress fit last week when I tried it on with my bridesmaids. My goal is attainable and I can't wait until I can wear my new bikini for our honeymoon. Only 4 1/2 months away!

Week 2 Weight Loss: 3.2lbs!

Jason & I just got back from our weigh in for the week and we have lost! I lost 3.2 lbs this week while he lost 2.8 lbs! YAY! That brings my total weight loss in 2 weeks to 7.2 lbs!!!  I am so EXCITED! I feel really happy with the all the healthy foods & activity we've been doing. At our wedding shower, I ate all veggies and 2 low point weight watcher brownies I made. I was very proud of myself for the discipline to fight off eating bad stuff! Well, I'm off to spend time with my family who is here from out of town. Have a great week!

Our Cake Topper is DONE!!


Here is our final cake topper!! It is awesome! I am SOOO EXCITED about this sitting on the top of our cake!

Wedding @ The Waffle House

My sister sent me this link to a video and photos of a Georgia couple who got married in the parking lot of the Waffle House. They both worked there and they decided to get married there since they both always had to work. This story is just another example of how true love prevails :) Enjoy! Updated Wedding Cake Topper


This is our ALMOST finished wedding cake topper of Jason and I that will be on top of our wedding cake. I asked them to change the color of my roses to red and make my hair a darker brown. Other than that I think they look pretty good! Have a great day!
